Autumn calls for a refreshing take on teas. There's hot tea, iced tea and our favourite way to consume tea, tea popsicles and granitas.
Here's a quick recipe that you can either turn into a granita or freeze straight up into an iced tea pop.
HIBISCUS WATERMELON GRANITA RECIPE
- 2 heaped tablespoons dried hibiscus petals
- 1 1/4 cup hot water
- 1/4 cup sugar
- 4 1/2 cups of watermelon cubes
- 2 limes, juiced
- 2 inch piece of ginger grated.
Steep hibiscus petals in room temperature water for an hour or two. Strain into a saucepan and add in the sugar. Stir to dissolve
In a blender, add cubed watermelon, lime juice, ginger & hibiscus mixture. Puree until smooth and well blended. Pour into a loaf tin and let it set in the freezer for 3-4 hours, scraping with a fork every now and then to make sure it freezes evenly. Scoop and serve.
For iced tea pops, pour the mixture into popsicle moulds and freeze.
